My husband loves all food, but has a sweet spot for Mexican! The Pressure Cooker Citrus Pulled Pork Tacos is an easy dish that you could prep on the weekend for a quick, weeknight meal.
I hate posting a recipe that needs a super special and quite pricey gadget. But seriously, everyone needs an Instant Pot! You can do SO many things with an Instant Pot. You can saute, steam, slow cook, make yogurt and of course, pressure cook! If you’re not strict paleo and eat rice sometimes, then you can use the rice cooker function as well!
The Citrus Pork has a minimal amount of ingredients, and should only take you a few minutes to throw in the Instant Pot. Then you can completely forget about it while it cooks! After it’s done cooking, I recommend you put it in the oven on broil for a few minutes. This results in pork that is super tender and crispy with a hint of citrus. If you’re including this in your meal prep, then after it comes out of the Instant Pot is when you would put it in the fridge. Save the broiler for right before you’re about to eat!
Oh man, look at that sinful crispy goodness.
The coleslaw is “easy-peasy” – just be sure to take advantage of your chef’s knife and slice that sucker thinly. The longer the slaw sits, the better. On busy weeknights you may not have time to wait for the slaw to sit, so you can do this one of two ways: you could make the slaw during your meal prep (just make sure to consume the slaw within a week or so). Or, you can just throw it together minutes before consuming, it will still taste great. Promise.
The last step is to make the cilantro lime dressing. Just like any Paleo mayo, you need an emulsion blender (or a whisk and a strong arm, but seriously, who wants to do that?!). It seems like a lot of people have issues using an emulsifier, and I think it has to do with brand. This is the one I have, and I’ve NEVER had an issue. Like ever.
Anywho, back to the dressing. Listen, this dressing totally makes this meal. It gives it a touch of creamyness, and that extra hit of tang from the lime just takes it away. This is also something I recommend you make during your meal prep. That way it’s all ready to go when dinner rolls around!
Then, find yourself a Siete tortilla or other Paleo-approved tortillas. If you’re currently on a Whole30, they would taste just as wonderful on a leafy-green wrap (romaine, chard, etc.).
Layer the crispy, citrus pork first.
And then some of the slaaaaw.
And most importantly, drizzle on some of the cilantro lime dressing.
Droooooool.

Pressure Cooker Citrus Pulled Pork Tacos

Ingredients
Citrus Pork
- 2-3 pounds of pork shoulder/butt
- ⅓ cup lime juice (~3 limes)
- ⅓ cup lemon juice (~2 lemons)
- 1 tsp salt
- 1 tsp garlic
- 1 tbsp cumin
- ¼ tsp cayenne
Slaw
- 2 pounds green cabbage
- 2 carrots
- ½ red onion
- 3 tbsp extra virgin olive oil
- 2 tbsp vinegar (red wine or apple cider vinegar)
- salt and pepper to taste
Cilantro Lime Dressing
- 1 egg
- 1 cup of avocado oil
- 1 tsp cumin
- ½ tsp coriander
- ½ tsp salt
- juice of one lime
- ¼ cup cilantro
Instructions
Citrus Pork
- Put the pork shoulder/butt in the Instant Pot.
- Squeeze lemon and lime juice onto the pork
- Sprinkle all seasonings on top of pork
- Set Instant Pot to manual pressure. You'll want 30 minutes per pound, so for a three pounder, you'll need an hour and a half.
- Let the Instant Pot release pressure on it's own for about ten minutes.
- Take the lid off. There will be a lot of liquid, so switch Instant Pot function to 'saute' on high. You can walk away and let it simmer, no need to babysit the pork.
- When most of the liquid is gone, transfer to a pan. Put in the oven on 'broil' for 2-3 minutes.
Slaw
- Thinly slice the cabbage.
- Julienne the carrot.
- Cut the onion in half. Put cut side down on your cutting board, and cut long thin strips.
- Toss cabbage, carrot and onion with oil, vinegar, salt and pepper.
Cilantro Lime Dressing
- Put all ingredients into large mason jar.
- Emulsify.
