Pressure Cooker Citrus Pulled Pork Tacos

Ingredients
Citrus Pork
  • 2-3 pounds of pork shoulder/butt
  • ⅓ cup lime juice (~3 limes)
  • ⅓ cup lemon juice (~2 lemons)
  • 1 tsp salt
  • 1 tsp garlic
  • 1 tbsp cumin
  • ¼ tsp cayenne
Slaw
  • 2 pounds green cabbage
  • 2 carrots
  • ½ red onion
  • 3 tbsp extra virgin olive oil
  • 2 tbsp vinegar (red wine or apple cider vinegar)
  • salt and pepper to taste
Cilantro Lime Dressing
  • 1 egg
  • 1 cup of avocado oil
  • 1 tsp cumin
  • ½ tsp coriander
  • ½ tsp salt
  • juice of one lime
  • ¼ cup cilantro
Instructions
Citrus Pork
  1. Put the pork shoulder/butt in the Instant Pot.
  2. Squeeze lemon and lime juice onto the pork
  3. Sprinkle all seasonings on top of pork
  4. Set Instant Pot to manual pressure. You'll want 30 minutes per pound, so for a three pounder, you'll need an hour and a half.
  5. Let the Instant Pot release pressure on it's own for about ten minutes.
  6. Take the lid off. There will be a lot of liquid, so switch Instant Pot function to 'saute' on high. You can walk away and let it simmer, no need to babysit the pork.
  7. When most of the liquid is gone, transfer to a pan. Put in the oven on 'broil' for 2-3 minutes.
Slaw
  1. Thinly slice the cabbage.
  2. Julienne the carrot.
  3. Cut the onion in half. Put cut side down on your cutting board, and cut long thin strips.
  4. Toss cabbage, carrot and onion with oil, vinegar, salt and pepper.
Cilantro Lime Dressing
  1. Put all ingredients into large mason jar.
  2. Emulsify.
