Set Instant Pot to manual pressure. You'll want 30 minutes per pound, so for a three pounder, you'll need an hour and a half.
Let the Instant Pot release pressure on it's own for about ten minutes.
Take the lid off. There will be a lot of liquid, so switch Instant Pot function to 'saute' on high. You can walk away and let it simmer, no need to babysit the pork.
When most of the liquid is gone, transfer to a pan. Put in the oven on 'broil' for 2-3 minutes.
Slaw
Thinly slice the cabbage.
Julienne the carrot.
Cut the onion in half. Put cut side down on your cutting board, and cut long thin strips.
Toss cabbage, carrot and onion with oil, vinegar, salt and pepper.
Cilantro Lime Dressing
Put all ingredients into large mason jar.
Emulsify.
